yeah, I recall it has different "layers" of flavor and texture from each bite. clean and crisp, not greasy like Yard House's.
I remember this one. It may look simple and seems similar to Yard House's version but the texture and taste are more interesting, complex and sophisticated. I like it more than his Cuban or Mesa Burger. Two thumbs up!

kevin, do you prefer CUT's 21 day dry aged or 35 day aged?
what I can think of as a good example is if you order a porterhouse from places like Peter Luger or many other steakhouses, you will see the bone (t-bone) and two sides of meat, the more tender side of course is the filet and usually I'd finish that part first. (haha).anyway, I notice recently many restaurants are serving their filet bone in. I don't know if that'd make the filet taste better since I don't have hands on experience.... is it good/better?
do they do the 5x5 every year? or is it just this year for the special olympics?
it looks like this salmon is mostly rare in the middle and with crispy skin on top?... wow, hopefully they'd put this in Providence's regular or tasting menu. This salmon looks better than the 2 other rare salmon I had in the past. just look at it...simply amazing, very envious:)
In his review, tangbro1 mentioned that he thought the rice was a bit dry. But the day I went, its rice was okay. (I did request extra coriander?) Anyway, I think currently this restaurant is still going through its growing pain. Hopefully the food and service will eventually pick up and be more consistent. It seemed that I knew more about the menu than the waiter last time I went.
I like the carbonated strawberries very much, your picture certainly beats the 1.4M cellphone shot I posted a couple days ago. ... but I thought my Angel Food was off (a bit dry) that day.. how was yours?
