By buddydvd 3 years ago Chef Chen in Irvine, CA also uses cabbage leaves at the bottom. However, they user lower grade, older cabbage leaves. I prefer they use wax paper instead. The old leaves taints the xlb with some weird taste that I don't like.

thinner skin
more juicy but not too salty juicy
right portion of pork (meat) & has good flavor...
napa cabbage on the bottom
the top of the XLB is soft
