Wow--this is OG w/ the napa cabbage leaves on the bottom. Haven't seen that in AGES (everyone here does parchment/wax paper now).

Luscious Dumplings still uses cabbage, but their xlb skins are a bit thick and not one of their best.

Chef Chen in Irvine, CA also uses cabbage leaves at the bottom. However, they user lower grade, older cabbage leaves. I prefer they use wax paper instead. The old leaves taints the xlb with some weird taste that I don't like.

I lick all XLB~~~ especially:
thinner skin
more juicy but not too salty juicy
right portion of pork (meat) & has good flavor...
napa cabbage on the bottom
the top of the XLB is soft

picky enough? lolz...

i agree with most of your requirements...thin skin, more juice, and right portion of meat is necessary. notice how in the picture, there is so much juice that it makes the skin sag. so yummy!
