Wow--this is OG w/ the napa cabbage leaves on the bottom. Haven't seen that in AGES (everyone here does parchment/wax paper now).

Luscious Dumplings still uses cabbage, but their xlb skins are a bit thick and not one of their best.

Chef Chen in Irvine, CA also uses cabbage leaves at the bottom. However, they user lower grade, older cabbage leaves. I prefer they use wax paper instead. The old leaves taints the xlb with some weird taste that I don't like.

I lick all XLB~~~ especially:
thinner skin
more juicy but not too salty juicy
right portion of pork (meat) & has good flavor...
napa cabbage on the bottom
the top of the XLB is soft

picky enough? lolz...
