Butter Poached Kona Cold Lobster.

Shrimp, Honda Tofu Cake, Jalapeno Tokyo Negi Sauce. (I think that means oil sauce?) Visually stunning, and texturally stunning as well. The lobster was perfect and I loved it! Just chewy, firm, and pull-apart enough to appreciate the sweetness of the lobster. Funny how lobster was a "trash fish" until several decades ago. My dad loved the veggie stuff on the bottom. It tasted like cilantro and watercress to me. I'm not sure what it was...the "honda tofu cake," probably. It did not taste like tofu.
