Purple, red, and white potatoes roasted with rosemary and duck fat

The LA Times recently did a story on roasting potatoes with duck fat so I decided to try it out. The duck fat was actually quite mild in flavor, but added a nice depth to the roasted potatoes. And supposedly, lower in fat than butter. I used the leftover fat drippings from my roasted duck.

I still have duck fat and the rosemary is from my garden, so if you bring over potatoes, I can roast some for you. :)

If you want purple potatoes, I usually just get a mixed bag from Trader Joe's. It's less than $2.

Duck fat popcorn? Gross lady! And you complain about bird's nest?
