By LA-OC-Foodie 2 years ago close-up of the greasy but very yummy brown butter sauce - and FYI, the ravioli I have here are smoked mozzarella & spinach/ricotta (off-white and green ones, respectively) -- and a little brown butter sauce goes a long way (about 1.5 tablespoon per person, maybe even less if you can toss pasta well.)

By LA-OC-Foodie 2 years ago cooked butter (just make sure to swirl often to avoid burning it) ~ and geez, I cooked that thing almost 2 hours ago and the yummy aromas are still wafting throughout my place.

By LA-OC-Foodie 2 years ago the mushrooms & pasta were cooked ahead of time, I just poured the already-browned butter on top -- color contributions from fungi would be minimal.
