Banh Beo is tiny rice flour cakes topped off here with shredded pork, some fried onions, minced shrimp, beans sprouts and that yellow stuff is yellow mung bean. You dip this into bowls of nuoc cham (fish sauce) and then you eat it. The texture is quite varied with the rice cake bottom having a slight gummy chewy consistency and course shredded pork mixed in it.

I was advised by my friend to actually let the little rice cakes soak in the fish sauce instead of merely dipping it in there.

This is really good but messy since you can't really fold the rice cakes to hold all the stuff on top of it.

yes, once you dip it into the fish sauce, it will add the salty and sweet dimensions to it filling out out the flavors of the other ingredients. Pretty neat how fish sauce can bring all the disparate ingredients together.

love this dish. fish sauce is soo good. what does it actually consist of, because it doesn't really taste like fish.
