By meowmi 1 year ago I love scallion pancakes, but I think you're right, bluejia. They're not as good anymore. Less green onion taste, for one...and a lot of them don't seem to have any salt in them, either. I love it when they're made the way my mom used to make them: w/ the green onions, salt and oil sealed between 2 circles of dough, twisted together, and then rolled out. I *think* that a lot of people nowadays just mix the green onions into the pancake dough...not as good.
