By LA-OC-Foodie 4 years ago while not entirely objective, beef is graded by the USDA for marbling of fat within its muscles (the fatty intermuscle streaks that gives it flavor, juiciness & tenderless -- as opposed to blobs of fat on the outside which is just... fattening) - prime is generally considered the best, followed by choice and select (most markets sells choice & select cuts) -- the cuts below select are usually used for processed foods.
