I don't know exactly since I didn't ask the chef...

since the middle was still rare and very fresh, I would imagine, if baked, not for a long period of time or some unknown techniques to sear it??

I just know at first I was not overwhelm by the presentation but after one bite I gained tremendous appreciation for this dish.

Is organic salmon similar to wild-caught salmon as opposed to farm-raised salmon, or is organic salmon considered in a separate class of it's own (being a unique specialty)? Was this Pacific or Atlantic salmon? According to my knowledge, the majority of Atlantic salmon are farmed and raised, mainly in South American countries such as Chile, since the original Atlantic salmon species are extinct in the waters of the Atlantic Ocean. Seems ironic that Atlantic salmon are now "farmed" and found only in the waters of the Pacific Ocean. As for wild-caught salmon, my family's only had the pleasure and opportunity to consume Pacific salmon caught in the waters of the American River near Sacramento, when the salmon are caught during their annual migration to reproduce. :) I never heard of organic salmon before; how interesting!

beats me, honestly CaraCara:)

I am guessing that this salmon must be farmed..? organic food could be fed to the salmon? the bottom line is I do not know for sure...just my wild guess??

and with all the concerns re: mercury, wild-caught salmon, halibut, etc. are just not as chemical- free as they used to be

anyway, how was the salmon consumed near Sacramento? some fresh salmon can be very tasty:)
