At Little Fat Sheep on 120 S. Atlantic in Monterey Park, CA this hot pot might be the most appetizing. The environment is Very welcoming. The owner and staff are very helpful, especially for me being from Texas and never seeing a setup like this. They made it very simple for me to enjoy my first experience of a Chinese hot pot. A savory pot of broth boils at the table, while you dip an assortment of meats, seafood, vegetables, dumplings, and noodles in to the broth.
It's not like any other Asian cultures with disparities of the hot pot, like the Japanese shabu shabu. Unlike the Japanese version where you'd cook in plain hot water then dip your food in a sauce, here the broth is hot with spices, Chinese herbs and chilies add the complete flavor you'd want. At the same time as selecting from numerous broths of a mixture of intensity, and special dishes to cook in it. Broths come in half amounts or whole. For example, Half mild and half extra spicy bowl of fizzy boiling broth. The mild one tastes of green vegetables and herbs, and can be eaten as a soup in the last course. The intensely spicy red broth is too hot to drink as a soup, even for people that think they can eat really spicy chilies. Note all the herbs and spices floating in the broths, which is the style served at Little Sheep. Not all places leave the floaters in.

This style of dining lends itself to large family style gatherings, and 32 hungry chowhounds convened for this feast. Or just two and a nice rainy, cold day. With about ten people per table, you can sample many more dishes than you could with a smaller group. I rate this restaurant a perfect score, due to the fact that it was well maintained and the owner and staff seem to be more helpful as a family then just employees. Can't wait to see the new improved Little Fat Sheep! GOT SHEEP!
