how do you make this chef? just slice up some rare beef? or do you have to treat the beef?

season it, sear it, partially freeze it, be very careful with your meat slicer (tho you do get to eat your mistakes) dress with good olive oil, and garnish with a little clump of herb salad. VoilĂ !

I've had yellowtail and red snapper carpaccio, never tried the beef though. It sounds good.
