With Wasabi-Pea Purée, and a Yuzu-Kocho Emulsion. Noticeably marbled and very tender for a NY. Paired with a complementary Barbaresco, "Ovello," Cascina Morassino, Italy (Piedmont, 1996).

Apparently they had to get this from Wolfgang's new CUT steakhouse down the street.

So was that tiny piece of meat worth the $45?

It was worth it just to try it, but under normal circumstances I wouldn't order it (since for $45 I could get a high quality 12oz filet which would be much more filling!).

Looks mighty tasty! So can you tell any noticeable difference between Japanese Wagyu and Australian Wagyu?

The examples I've had so far are pretty close. I'd have to have them back-to-back to be able to discern them reliably I imagine.

Actually, that's sort of what I want to do at CUT. Order up the Japanese and American Wagyus and compare.
