I believe mochi is basically any kind of rice cake that is stuffed with a sweet paste. It is both a Chinese and Japanese thing.

It doesn't necessarily have to be baked. But if they're baked, then the texture is pretty much like a loaf of bread. They also come in a glutinous form; so it's chewy and sticky. The modern ones instead of the traditional ones are stuffed with ice cream. I don't think they are injected, but rolled into it I believe.

I think they bake the ice cream mochi and then refreeze it. :P Actually, I haven't seen baked versions of the ice cream ones. The ice cream ones are usually made into glutinous rice cake.

o okay, so it seems to me that the glutinous rice cake version is made first, then they slice it open and add in ice cream and then use water or something to make it stick back together.

but baking with ice cream? that'd cause it to get mushy =X and then u wont be able to taste it, sigh. i wish i had some, i'd like to try it

no haha, mochi doesn't have to hav ice cream :] it can also be just the flavored paste, mm i think u can buy them in any asian bakery/ supermarket... they're good!
